Seasonal ingredient notes from The Kitchen below!
THE FEAST
Mowbray-made bread & butter (v, g)
Potted crab (with mace infused butter & soft herbs) with radishes (v, g)
Avocado dip & radishes for our vegan & vegetarian guests
Asparagus & pullet eggs with tarragon mayonnaise (v)
The asparagus is at its absolute best right now! ‘Pullet’ refers to the first eggs of juvenile hens - they are small but perfectly formed. They’re not always available so finger’s crossed! If they’re not we’ll use great free range eggs hen or duck eggs.
Coronation chicken salad; Tandoori marinated chicken with sultanas & toasted almonds
Coronation cauliflower salad for our vegan & vegetarian guests
A Royal classic reimagined as a delicious summer salad. We absolutely love coronation chicken - in a freshly baked roll or hot jacket potato but this is slightly more sophisticated! Our chicken is marinated with lemon & paprika, then again with yoghurt, garlic, ginger & toasted spices then grilled over the flames. Shredded and tossed with sweet sultanas and toasted almonds.
Chargrilled Derbyshire lamb leg with peas, broad beans & mint
Potato gnocchi with peas, broad beans & mint for our vegan & vegetarian guests
Lamb season is in full swing - it’s at its absolute best! The fresh peas & broad beans have just begun and are sweet. Our lamb is marinated with rosemary, thyme & lemon then grilled and gently roasted so that it’s perfectly pink.
Jersey Royals with sauteed turnips & pickled shallots (v)
These potatoes surely need no introduction. Grown by the sea so they are rich in flavour, with a papery thin skin. The turnips are small, sweet & tender.
Roasted carrots, Berkswell sheep's cheese & watercress (v)
Berkswell is one of our favourite cheeses! Similar to Manchego but made in Warwickshire with a mild & nutty flavour which pairs wonderfully with roasted carrots.
TO FINISH
Gooseberry, Yorkshire honey & clotted cream fool (v)
Queen of puddings; strawberries & blackcurrants, vanilla custard, meringue (v, g)
A good old fashioned British pud! Made posh with our favourite berries and a mound of fluffy, baked meringue.
(v) = vegetarian (ve) = vegan (g) = contains gluten
